This is a slightly modified version of a really good recipe my husband found on “Pinch of Yum” and I cannot express how incredibly amazing this was! The sauce was definitely the shining star in this recipe with the roasted tomatillos, poblano, and jalapeno peppers! It was so good we had it two nights in a row. Well, ok, we had plenty of leftovers, but even if we hadn’t I would’ve have made this all over again. Yes, it really was that delicious. Can you tell I’m obsessing a bit?
We decided to add a can of pinto beans and layered it with some cilantro lime rice, chicken, cheese, and sour cream. I also substituted the homemade tortilla strips with plain Tostitos chips. We added a fried egg on the second night we had it and it was SO good!
